Ingredients

Maine Lobster Roll

  • 8 oz Cooked lobster meat chopped
  • 2 TBSP Mayonnaise
  • 1 TBSP Lemon juice
  • 1 TBSP Fresh chives chopped
  • Salt to taste
  • Black pepper to taste
  • 4 Hot dog buns New England-style if available
  • 1 TBSP Butter melted
  • Lettuce for serving
  • 2 oz Potato chips
  • 2 Pickle spears

Homemade Lemonade

  • 1 cup Lemon juice fresh squeezed
  • 16 oz Water
  • 2 TBSP Sugar use to taste
  • Ice cubes

Instructions

  • In a bowl, combine the lobster meat, mayonnaise, lemon juice, chives, salt, and pepper. Mix well to coat the lobster meat evenly with the dressing.
  • Preheat a skillet or griddle over medium heat. Brush the sides of the hot dog buns with melted butter.
  • Toast the buns in the skillet or griddle until they are golden brown on both sides.
  • Line each toasted bun with lettuce leaves. Divide the lobster mixture equally between the buns, filling them generously.
  • Mix the ingredients for lemonade. Serve over ice if desired.
  • Serve the Maine lobster rolls with chips, pickle, and homemade lemonade.
