Loaded Potato Skins

Ingredients

  • 2 medium Russet potatoes rinsed
  • 1 slice Bacon chopped small (optional)
  • 4 tsp Extra-virgin olive oil
  • 1/2 cup Cheddar cheese shredded
  • 2 tsp Sour cream
  • 2 tsp Fresh chives chopped

Instructions

  • Preheat oven to 400°F. Place potatoes on a baking sheet and bake for about 30 minutes.
  • Place the bacon in a nonstick pan over medium heat. Cook until crispy then set aside on paper towels to drain any excess grease.
  • Preheat the broiler on low.
  • Slice 4 sides off the potato to create potato skins (discard the center or save and use for breakfast home fries if desired). Season with salt and pepper. Drizzle with oil. Then place under the broiler to golden brown and crispy.
  • Once golden brown and crispy, top with cheese and bacon (if using). Place back under the broiler to melt the cheese.
  • Top with a little dollop of sour cream and chives before serving.
