Ingredients

  • 2 tsp Extra-virgin olive oil
  • 1 cup Mushrooms sliced
  • Scallions
  • 1/4 cup Reduced-sodium soy sauce
  • 2 tbsp Rice wine vinegar
  • 8 oz Ramen noodles

Instructions

  • In a pot of boiling water cook the noodles according to the directions on the package. Drain well then set aside.
  • Heat the oil in a non-stick pan over medium heat. Sauté the mushrooms until soft. Whisk in the soy sauce, vinegar, and peanut butter until smooth. Toss in the noodles.
  • Garnish with carrot.
