Ingredients
- 2 tsp Extra-virgin olive oil
- 1 cup Mushrooms sliced
- Scallions
- 1/4 cup Reduced-sodium soy sauce
- 2 tbsp Rice wine vinegar
- 8 oz Ramen noodles
Instructions
- In a pot of boiling water cook the noodles according to the directions on the package. Drain well then set aside.
- Heat the oil in a non-stick pan over medium heat. Sauté the mushrooms until soft. Whisk in the soy sauce, vinegar, and peanut butter until smooth. Toss in the noodles.
- Garnish with carrot.
