Ingredients
- 2 cups Potatoes peeled and diced small
- 1 tsp Paprika
- 1 tsp Fresh rosemary minced
- 4 cloves Garlic chopped
- 2 tbsp Extra-virgin olive oil
- 1 tbsp Lemon juice or more if needed
- 1 tbsp Fresh parsley roughly chopped
Instructions
- Preheat oven to 375°F.
- Toss the potatoes with salt, pepper, paprika, rosemary, garlic, oil, and lemon juice.
- Place on a foil-lined baking sheet and bake in the oven until golden brown and tender, about 30 minutes. Occasionally stir the potatoes to get even cooking.
- Garnish with fresh parsley before serving.
