Lemon Herb Potatoes

Ingredients

  • 2 cups Potatoes peeled and diced small
  • 1 tsp Paprika
  • 1 tsp Fresh rosemary minced
  • 4 cloves Garlic chopped
  • 2 tbsp Extra-virgin olive oil
  • 1 tbsp Lemon juice or more if needed
  • 1 tbsp Fresh parsley roughly chopped

Instructions

  • Preheat oven to 375°F.
  • Toss the potatoes with salt, pepper, paprika, rosemary, garlic, oil, and lemon juice.
  • Place on a foil-lined baking sheet and bake in the oven until golden brown and tender, about 30 minutes. Occasionally stir the potatoes to get even cooking.
  • Garnish with fresh parsley before serving.
