Ingredients

Wrap

  • 4 cups Kale stems removed
  • 1 tsp Extra-virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup Hummus
  • 2 Tortilla wrap
  • ½ Cucumber thinly sliced
  • ¼ Red onion thinly sliced
  • 2 tsp Raw sunflower seeds
  • ¼ cup Feta cheese crumbled (optional)
  • 1 TBSP Hot sauce or sriracha (optional)
  • 2 oz Potato chips
  • 2 Pickle spears

Homemade Lemonade

  • 1.5 cups Lemon juice fresh squeezed
  • 12 oz Water
  • 2 TBSP Sugar use to taste
  • Ice cubes

Instructions

  • Prep the ingredients per the instructions above.
  • Prepare the Kale: Wash and dry the kale leaves. Remove the stems and chop the leaves into bite-sized pieces. In a large mixing bowl, add the kale leaves, olive oil, and salt. Massage the kale with your hands for a few minutes until it becomes tender and wilted.
  • Assemble the Wraps: Spread the hummus on each wrap. Divide kale, cucumber, red onion, sunflower seeds, and feta onto each tortilla. Fold in the ends and roll up tight.
  • Make the lemonade: Mix all the ingredients for the lemonade. Serve over ice.
  • Drizzle hot sauce or sriracha over wraps. Cut in half and serve with chips, pickles, and homemade lemonade.
