Ingredients
Wrap
- 4 cups Kale stems removed
- 1 tsp Extra-virgin olive oil
- Salt and pepper to taste
- 1/2 cup Hummus
- 2 Tortilla wrap
- ½ Cucumber thinly sliced
- ¼ Red onion thinly sliced
- 2 tsp Raw sunflower seeds
- ¼ cup Feta cheese crumbled (optional)
- 1 TBSP Hot sauce or sriracha (optional)
- 2 oz Potato chips
- 2 Pickle spears
Homemade Lemonade
- 1.5 cups Lemon juice fresh squeezed
- 12 oz Water
- 2 TBSP Sugar use to taste
- Ice cubes
Instructions
- Prep the ingredients per the instructions above.
- Prepare the Kale: Wash and dry the kale leaves. Remove the stems and chop the leaves into bite-sized pieces. In a large mixing bowl, add the kale leaves, olive oil, and salt. Massage the kale with your hands for a few minutes until it becomes tender and wilted.
- Assemble the Wraps: Spread the hummus on each wrap. Divide kale, cucumber, red onion, sunflower seeds, and feta onto each tortilla. Fold in the ends and roll up tight.
- Make the lemonade: Mix all the ingredients for the lemonade. Serve over ice.
- Drizzle hot sauce or sriracha over wraps. Cut in half and serve with chips, pickles, and homemade lemonade.
