Ingredients
- 2 tbsp Extra-virgin olive oil
- 6 oz Deli ham diced
- 8 Eggs scrambled
- 4 tbsp Tomato diced
- 4 oz Chevre cheese crumbled
- 4 slices Multigrain bread toasted
- 8 wedges Watermelon cut into small wedges
Instructions
- In a nonstick pan, heat the oil over medium heat. Add ham; cook 1 - 2 minutes.
- Add the scrambled eggs, tomato, and chevre to the pan. Move the eggs around the pan using a spatula until they are cooked and no longer runny.
- Toast the bread.
- Serve the eggs with toast and watermelon wedges.
