Ham Chevre Scrambled Eggs

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 6 oz Deli ham diced
  • 8 Eggs scrambled
  • 4 tbsp Tomato diced
  • 4 oz Chevre cheese crumbled
  • 4 slices Multigrain bread toasted
  • 8 wedges Watermelon cut into small wedges

Instructions

  • In a nonstick pan, heat the oil over medium heat. Add ham; cook 1 - 2 minutes.
  • Add the scrambled eggs, tomato, and chevre to the pan. Move the eggs around the pan using a spatula until they are cooked and no longer runny.
  • Toast the bread.
  • Serve the eggs with toast and watermelon wedges.
