Ingredients
- 2 tbsp Dijon mustard
- 2 tbsp Honey
- 4 Croissant
- 2 cups Spring mix
- 12 slices Tomato
- 12 oz Deli ham
- 4 oz Brie cheese sliced
- 4 Pickle spears
Potato Salad
- 1.5 cups Potatoes peeled and diced
- 1 tbsp Red onion minced
- 1/4 cup Celery diced
- 1/4 cup Carrots shredded
- 2 tbsp Mayonnaise
Instructions
- For the potato salad: Add the potatoes to a saucepan or pot and cover with cool water. Bring to a simmer and cook until tender, about 6 minutes, should be able to easily pierce with a fork. Drain well and refrigerate to cool completely. Once cooled mix with red onion, celery, carrots, mayo, and season with salt and pepper to taste.
- Mix together the mustard and honey in a bowl.
- Spread the honey mustard mixture on the croissant and layer with spring mix, tomatoes seasoned with salt and pepper, ham and brie.
- Serve with pickles and potato salad.
