Ham Brie Croissant

Ingredients

  • 2 tbsp Dijon mustard
  • 2 tbsp Honey
  • 4 Croissant
  • 2 cups Spring mix
  • 12 slices Tomato
  • 12 oz Deli ham
  • 4 oz Brie cheese sliced
  • 4 Pickle spears

Potato Salad

  • 1.5 cups Potatoes peeled and diced
  • 1 tbsp Red onion minced
  • 1/4 cup Celery diced
  • 1/4 cup Carrots shredded
  • 2 tbsp Mayonnaise

Instructions

  • For the potato salad: Add the potatoes to a saucepan or pot and cover with cool water. Bring to a simmer and cook until tender, about 6 minutes, should be able to easily pierce with a fork. Drain well and refrigerate to cool completely. Once cooled mix with red onion, celery, carrots, mayo, and season with salt and pepper to taste.
  • Mix together the mustard and honey in a bowl.
  • Spread the honey mustard mixture on the croissant and layer with spring mix, tomatoes seasoned with salt and pepper, ham and brie.
  • Serve with pickles and potato salad.
