Grilled Turkey Rueben

Ingredients

  • Nonstick spray
  • 4 tbsp Thousand Island dressing
  • 8 slices Rye bread
  • 8 slices Swiss cheese
  • 2 cups Sauerkraut or more if desired
  • 12 oz Deli turkey breast sliced thin
  • 4 oz Potato chips
  • 4 Pickle spears

Instructions

  • Preheat a panini grill or George Foreman grill (or preheat oven to 350°F if you don't have a grill style press). Lightly grease with non-stick spray.
  • Spread the dressing on both slices of bread (or serve on the side if desired). Place a slice of cheese, sauerkraut, turkey, another slice of cheese, and top with slice of bread.
  • Place the sandwich on the grill press until golden brown and the cheese is melted (can also use a non-stick pan with non-stick spray covered with a lid).
  • Slice in half and serve with potato chips and pickles on the side.
