Grilled Chicken Pita

Ingredients

  • 3/4 lb Chicken breast boneless skinless
  • 4 Pita bread halved
  • 4 tbsp Mayonnaise
  • 8 slices Fresh mozzarella sliced thin
  • 8 slices Tomato
  • 2 cups Baby spinach
  • 1/4 cup Red onion shaved
  • 2 Pickles sliced into rounds
  • 2 oz Potato chips

Instructions

  • Preheat a grill or grill pan on medium heat. Season the chicken well with salt and pepper on both sides. Cook the chicken on both sides to an internal temperature of 160 degrees using a thermometer. Set aside to rest for 5 minutes before slicing thin.
  • Heat a nonstick pan on medium heat. Warm the pita on both sides to light golden brown.
  • Spread the mayo on all slices of bread.
  • Layer the bread with cheese, tomato seasoned with salt and pepper, chicken, spinach, red onion, and top half of pita.
  • Cut the sandwich in half, serve with pickles and chips.
