Ingredients

Green Goddess Crunch Sandwich

  • 1/4 cup Fresh chives finely chopped
  • 1/4 cup Mayonnaise
  • 1/4 cup Fresh tarragon
  • 1/4 cup Greek yogurt
  • 1/2 Lemon juice and zest
  • 2 TBSP Extra-virgin olive oil plus more for drizzling
  • Salt to taste
  • Black pepper to taste
  • 1/2 Lemon
  • 1/2 head Butter lettuce large leaves torn
  • 1/4 Cucumber thinly sliced
  • 4 slices Sourdough bread
  • 4 oz Fresh mozzarella sliced ¼ inch thick
  • 2 cups Alfalfa sprouts
  • 1 Avocado thinly sliced
  • 2 oz Sour cream cheddar potato chips
  • 2 Pickle spears

Pineapple Juice Spritzer:

  • 12 oz Sparkling water
  • 12 oz Pineapple juice
  • Ice cubes optional

Instructions

  • Prep sandwich ingredients per the instructions above.
  • Make green goddess dressing: Place chives, mayonnaise, tarragon, and yogurt in a blender along with zest and juice of the lemon, oil, salt, and pepper to taste. Purée until smooth.
  • Squeeze juice from the remaining lemon half over lettuce and cucumbers in a medium bowl. Drizzle with oil; season with salt and pepper. Toss to coat.
  • Spread the dressing on one side of each slice of bread.
  • Layer the bottom slice of bread with lettuce, cucumbers, mozzarella, sprouts, and avocado. Season with salt and pepper.
  • Combine the sparkling water with the pineapple juice, and serve spritzer over ice if desired.
  • Serve: Cut the sandwich in half. Enjoy with chips, pickle, and pineapple spritzer.
