Ingredients

Toum (Garlic Sauce)

  • 4 cloves Garlic
  • 1/2 cup Vegetable oil
  • 1 TBSP Lemon juice
  • Salt to taste

Rice with Red Sauce

  • 1/2 cup White rice
  • 1 cup Water
  • 1/2 cup Tomato sauce
  • 1/4 tsp Dried oregano
  • Salt to taste
  • Black pepper to taste

Greek Chicken Kebab

  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried oregano
  • 3 tsp Lemon juice
  • 6 TBSP Extra-virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • 8 oz Chicken breast boneless skinless cut into 1” pieces
  • 2 Pita bread

Grilled Halloumi

  • 4 oz Halloumi cheese sliced into slabs

Lemon Sparkling Water

  • 24 oz Sparkling water
  • 1 Lemon sliced

Instructions

  • Make Toum (Garlic Sauce): In a blender, combine garlic, vegetable oil, lemon juice, and a pinch of salt. Blend until smooth and creamy. Adjust salt to taste. Set aside.
  • Prepare Rice with Red Sauce: In a saucepan, combine rice, water, tomato sauce, dried oregano, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is cooked and the sauce is absorbed. Fluff the rice with a fork and set aside.
  • Grill Greek Chicken Kebab and Pita: In a bowl, whisk together garlic powder, dried oregano, lemon juice, and extra-virgin olive oil. Season with salt and pepper.
  • Thread the chicken pieces onto kebab skewers and brush with the prepared marinade. Grill the chicken kebabs until fully cooked, turning occasionally.
  • Lightly grill the pita bread until warmed and slightly golden.
  • Grill Halloumi: If using a grill, brush the grill grates with oil and add the halloumi. If using a grill pan, heat it over medium-high heat, drizzle with oil, and add the halloumi. Cook for about 1 minute per side or until grill marks appear.
  • Prepare Lemon Sparkling Water: Add lemon slices to the sparkling water.
  • Assemble and Serve: Place the grilled chicken kebabs on a plate with the rice. Arrange the grilled halloumi on the side. Serve the pita bread with a dollop of toum on the side. Garnish the rice with additional sauce if desired. Serve with lemon sparkling water.
