Ingredients

  • Nonstick spray
  • 2 cups Rolled oats or old fashioned oats
  • 1/3 cup Sliced almonds
  • 1/2 cup Shredded coconut
  • 1/4 cup Pumpkin seeds roasted unsalted
  • 1 TBSP Coconut oil
  • 3 TBSP White grape juice concentrate
  • pinch Salt
  • 1/2 cup Dried apricots chopped
  • 1/2 cup Medjool dates chopped
  • 1/2 cup Strawberries sliced

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Preheat the oven to 250 °F. Lightly coat a large rimmed baking sheet with nonstick spray.
  • In a large bowl, combine oats, almonds, coconut, and pumpkin seeds. In a medium bowl, combine oil, juice, and salt. Pour oil mixture into oat mixture; toss to coat. Spread the mixture evenly on the prepared baking sheet. Bake for 25 minutes, until golden, stirring often.
  • Transfer to a large bowl; stir in dried apricots and dates.
  • Portion, top with strawberries and serve with orange juice.
