Preheat the oven to 250 °F. Lightly coat a large rimmed baking sheet with nonstick spray.
In a large bowl, combine oats, almonds, coconut, and pumpkin seeds. In a medium bowl, combine oil, juice, and salt. Pour oil mixture into oat mixture; toss to coat. Spread the mixture evenly on the prepared baking sheet. Bake for 25 minutes, until golden, stirring often.
Transfer to a large bowl; stir in dried apricots and dates.
Portion, top with strawberries and serve with orange juice.
