Ingredients

Breakfast Bake

  • 2 cups Rolled oats
  • 1.5 TBSP Brown sugar
  • 1/2 tsp Baking powder
  • 1/2 tsp Ground cinnamon
  • tsp Salt
  • 1/2 cup Milk
  • 1/2 tsp Vanilla extract
  • 1 Egg white beaten
  • Nonstick spray
  • 2 Clementine peeled and sectioned
  • 1/4 cup Raspberries
  • 1/4 cup Blackberries

White Grape Juice

  • 16 oz White Grape Juice

Instructions

  • Heat oven to 350 °F (176 °C).
  • In a large bowl, stir together oats, brown sugar, baking powder, cinnamon, and salt. Combine well. In a separate bowl stir together milk, vanilla, and egg whites. Add to oat mixture. Stir to combine well. Let stand for about 5 minutes until the liquid is absorbed.
  • Grease muffin wells with nonstick spray. Portion oat mixture evenly into cups.
  • Bake for 20 minutes or just until firm. Let stand in pan on a wire rack for 5 minutes.
  • Serve the muffins topped with clementine and berries. Enjoy with juice.
