In a large bowl, stir together oats, brown sugar, baking powder, cinnamon, and salt. Combine well. In a separate bowl stir together milk, vanilla, and egg whites. Add to oat mixture. Stir to combine well. Let stand for about 5 minutes until the liquid is absorbed.
Grease muffin wells with nonstick spray. Portion oat mixture evenly into cups.
Bake for 20 minutes or just until firm. Let stand in pan on a wire rack for 5 minutes.
Serve the muffins topped with clementine and berries. Enjoy with juice.
