Ingredients

  • 4 tbsp Mayonnaise
  • 2 tbsp Relish
  • 1 tsp Lemon zest
  • 4 tbsp Extra-virgin olive oil
  • 1/4 cup All-purpose flour
  • 2 Eggs beaten
  • 2 tsp Paprika
  • 1/2 cup Breadcrumbs
  • 1 lb Tilapia filets
  • 4 Texas toast lightly toasted (or your choice of bread)
  • 8 leaves Romaine lettuce
  • 12 slices Tomato
  • 4 Pickles halved
  • 4 oz Potato chips

Instructions

  • In a bowl mix the mayo, relish, lemon zest, and season with salt and pepper.
  • Preheat a saute pan on low medium heat with the oil.
  • Set up a bowl with the flour, a bowl with eggs, and In another bowl mix the paprika, breadcrumbs seasoned with salt.
  • Coat the tilapia with flour, then dip into the egg, and then coat well with breadcrumbs.
  • Fry the breaded tilapia on both sides to golden brown to an internal temperature of 140 degrees using a thermometer, about 10 minutes. (Time will vary based on your fish fillet thickness).
  • Lightly toast the bread. Layer with lettuce, tomato seasoned with salt and pepper, and breaded fish. Top with tartar sauce.
  • Cut in half and serve with pickles and chips.
