Fried Green Tomato Turkey Sandwich

Ingredients

  • 1 large Green Tomato 1/4 inch thick slices
  • 1 Egg beaten
  • 1/2 cup Seasoned Panko bread crumbs or more if needed
  • 1/4 cup Canola oil
  • 4 Asiago Roll or bread of your choice
  • 4 tbsp Mayonnaise
  • 1 tsp Chipotle Sauce use more or less depedning upon desired spiciness
  • `1 tbsp Honey
  • 2 cups Spring mix
  • 8 oz Deli turkey breast
  • 4 oz Mediterranean Gouda sliced
  • 2 oz Potato chips
  • 4 Pickle spears

Instructions

  • Season the tomato slices with salt and pepper on both sides. Dip each slice into the egg then coat well on both sides with breadcrumbs. (Take your time coating the tomato slices with the breadcrumb so as much sticks on as possible)
  • Heat the oil in a saute pan on medium heat. Once hot, fry the tomato slices on both sides to golden brown and softened. Set aside on paper towels to drain excess grease and season with salt.
  • Warm the rolls in a 300 degree oven for 3 to 5 minutes.
  • In a bowl, whisk the mayo, chipotle, and honey. Season with salt and pepper. Spread the mixture on both halves of the roll or put on the side if desired.
  • Layer the roll with spring mix, turkey, fried tomato slices, and cheese.
  • Cut in half and serve with chips and pickles.
