Ingredients

- 4 oz Breakfast sausage links about 2 links per portion
- 1/2 cup Baked beans
- 1 TBSP Extra-virgin olive oil
- 1 cup Grape tomatoes
Seasoning
- Salt to taste
- Black pepper to taste
Eggs
- 2 tsp Extra-virgin olive oil
- 4 Eggs
- 2 slices Your choice of bread
- 2 tsp Butter
Orange Juice
- 16 oz Orange juice cold
Instructions
- Prep the ingredients per the instructions above.
- Preheat the oven to 375°F (190°C).
- Cook the sausage on a foil-lined baking sheet in the oven to an internal temperature of 160°F (71°C).
- Place the baked beans in a saucepan over medium-low heat, and stir occasionally until hot.
- Heat the oil in a saute pan over medium heat. Blister the tomatoes in the pan until softened. Season with salt and pepper to taste.
- Heat a non-stick pan on medium heat. Once hot, add the oil. Crack the eggs on a flat surface and into the pan. Cook until the whites of the eggs start to set and become firm. Add a tablespoon or two of water and cover with a lid to finish firming up the whites of the eggs while keeping the yolks soft, for about 1 to 2 minutes. Season with salt and pepper.
- Toast the bread. Then spread with butter.
- Serve the eggs with sausage, baked beans, tomatoes, toast, and orange juice.
