Ingredients

Home Fries

  • 2 cups Red potatoes diced
  • 2 TBSP Extra-virgin olive oil
  • ½ tsp Paprika
  • ½ tsp Garlic powder
  • ¼ tsp Onion powder

Seasoning

  • Kosher salt
  • Black pepper

Eggs

  • 4 oz Breakfast sausage links about 2 links per portion depending on size
  • 1 TBSP Butter
  • 4 Eggs
  • 2 slices Your choice of bread lightly toasted
  • 2 tsp Butter
  • 4 tsp Your choice of jam

Pears

  • 2 Pears sliced

Coffee

  • Coffee
  • Your choice of creamer
  • Your choice of sweetener

Instructions

  • Prep the ingredients per the instructions above.
  • Preheat oven to 400°F (204°C). Spray a baking sheet with non-stick spray.
  • Place potatoes in a mound in the center of a baking sheet. Drizzle with olive oil. Sprinkle potatoes with paprika, garlic powder, onion powder, salt, and pepper. Toss well to evenly coat in oil and spices. Spread potatoes evenly into a single layer. Bake for 15 minutes. Then toss and continue to bake until just tender, about 15 minutes longer.
  • Preheat the broiler. Broil the potatoes for about 2 - 3 minutes until slightly browned. Then toss and continue to broil until golden brown and crisp on opposite sides, a minute or two longer.
  • For the sausage: Cook in the oven to an internal temperature of 160°F (71°C) using a thermometer.
  • Brew and prepare the coffee to your liking.
  • Melt the butter in a nonstick pan over medium heat. Crack the eggs into the pan and cook until the whites are firm. Season with salt and pepper to taste.
  • Toast the bread then spread them with butter and jam.
  • Serve the eggs with sausage, breakfast potatoes, toast, pears, and coffee.
