Eggs, Sausage, and Banana Nut Muffin with Butter

Ingredients

Banana Nut Muffin

  • cup All-purpose flour
  • ½ tsp Baking powder
  • 1 pinch Salt
  • 1 Banana mashed with a fork
  • 2 TBSP Brown sugar
  • ½ tsp Ground cinnamon
  • 1 Egg lightly beaten
  • 1 tsp Vanilla extract
  • 2 TBSP Butter melted plus more for buttering the muffin
  • ¼ cup Walnuts chopped
  • Nonstick spray or muffin liners

Orange Juice

  • 12 Oranges refrigerated so they’re cold

Eggs

  • 4 oz Breakfast sausage links about 2 links per portions depending on size
  • 1 TBSP Butter
  • 4 Eggs

Coffee

  • Coffee
  • Your choice of creamer
  • Your choice of sweetener

Salad

  • 2 cups Arugula
  • Extra-virgin olive oil
  • Lemon juiced

Instructions

  • Preheat oven to 350°F (190°C).
  • Prep the ingredients per the instructions above.
  • Mix and bake the muffins: In a large bowl, measure out and mix together flour, baking powder, and salt. In another bowl, beat together bananas, sugar, cinnamon, egg, vanilla, and melted butter. Stir the banana mixture into the flour mixture just until combined. Fold in the nuts.
  • Lightly grease a large muffin tin with nonstick spray, or line with muffin papers. Spoon batter into the greased muffin tin to fill them about ¾ of the way. Transfer to the oven to bake for about 20 minutes. While the muffins are baking, make the coffee.
  • Juice the oranges and refrigerate until service.
  • Check that the muffins are done by inserting a toothpick in the center. If it comes out clean, the muffins are done. If the toothpick has wet batter stuck to it, more cooking time is required. Cook a few minutes longer, then test again, until a toothpick inserted into the center of a muffin comes out clean. Remove from the oven and let cool for 5 minutes.
  • For the sausage: Cook in the oven to an internal temperature of 160°F (71°C) using a thermometer.
  • Melt the butter in a nonstick pan over medium heat. Crack the eggs into the pan and cook until the whites are firm. Season with salt and pepper to taste.
  • Brew and prepare the coffee to your liking.
  • Halve the muffins then spread them with butter.
  • In a bowl toss the arugula with oil and lemon juice to taste. Season with salt and pepper.
  • Serve the eggs with sausage, muffin, arugula, coffee, and orange juice.
