Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 Potatoes peeled and shredded
  • 1/2 Onion diced
  • 1/2 Red bell pepper seeded and diced
  • 6 oz Deli corned beef chopped fine
  • 3 oz Cheddar cheese shredded
  • 8 Eggs
  • 4 slices Sourdough bread toasted (or bread of your choice)
  • 4 oz Grapes

Instructions

  • Preheat the oven broiler on low.
  • Heat oil in a nonstick pan over medium heat. Add the potatoes; season with salt and pepper and saute for 2 - 3 minutes. Add in the onion and pepper and saute for 5 - 6 minutes until the potatoes are tender. Mix in the corned beef.
  • With the back of a spoon, make evenly spaced pockets. Sprinkle the cheese over top and crack an egg into each pocket. Season with salt and pepper.
  • Transfer the pan to the oven underneath the oven broiler, cook about 4 - 6 minutes until the whites of the eggs are firm. Remove from the oven and divide into portions.
  • In the meantime toast the bread. Serve with grapes.
