Instructions
Preheat the oven broiler on low.
Heat oil in a nonstick pan over medium heat. Add the potatoes; season with salt and pepper and saute for 2 - 3 minutes. Add in the onion and pepper and saute for 5 - 6 minutes until the potatoes are tender. Mix in the corned beef.
With the back of a spoon, make evenly spaced pockets. Sprinkle the cheese over top and crack an egg into each pocket. Season with salt and pepper.
Transfer the pan to the oven underneath the oven broiler, cook about 4 - 6 minutes until the whites of the eggs are firm. Remove from the oven and divide into portions.
In the meantime toast the bread. Serve with grapes.
