Ingredients

Mac and Cheese

  • 4 oz Elbow macaroni
  • 1 ½ TBSP Butter
  • 1 TBSP All-purpose flour
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper
  • 3/4 cup Milk
  • 1/3 cup Half and half
  • 1 ¼ cups Cheddar cheese shredded

Corn Dogs

  • 4 Corn Dogs
  • Ketchup for serving
  • Mustard for serving

Lemon Sparkling Water

  • 24 oz Sparkling water cold
  • 1 Lemon sliced
  • Ice cubes optional

Instructions

  • Make the Mac and Cheese: In a pot of salted boiling water, cook the macaroni according to package instructions. Drain and set aside. Lightly grease a baking dish.
  • Melt the butter in a medium saucepan over medium heat. Blend in the flour, salt, and pepper. Cook for 2 minutes. Slowly add the milk and half and half, stirring constantly, and cook over medium-low heat for a few minutes until the mixture has thickened like the consistency of gravy. Remove from heat and stir in ¾ of the shredded cheese, stirring just until melted.
  • Add the cooked macaroni noodles and toss to coat. Pour the pasta mixture into the prepared baking dish. Sprinkle the remaining cheese over the top.
  • Bake for 15 - 20 minutes or until the cheese is melted on top.
  • Prepare the corn dogs according to the instructions on the package.
  • Mix together sparkling water ingredients. Serve over ice if desired.
  • Serve the corn dogs with mac and cheese and lemon sparkling water. Serve with choice of condiments.
