Coconut Lime Tilapia

Ingredients

  • 6 oz Tilapia filets
  • 2 tbsp Extra-virgin olive oil
  • 1/2 tsp Lime zest
  • 3 cloves Garlic sliced
  • 1/4 cup Chicken broth
  • 1/4 cup Coconut milk
  • 1/2 tsp Lime juice
  • 1 tsp Fresh cilantro chopped, plus more for garnish
  • 2 Dinner rolls warmed in the oven prior to serving if desired

Instructions

  • Preheat the oven broiler on medium heat.
  • Season both sides of the tilapia with salt and pepper. Drizzle with oil and lime zest. Broil to an internal temperature of 125 degrees using a thermometer.
    (keep a watchful eye using the broiler so the fish doesn't burn and dry out)
  • Heat a sauté pan on medium heat. Once hot, add the remaining oil. Saute the garlic until golden brown. Stir in the broth, coconut milk, and lime juice. Bring to a simmer until it reduces and thickens to a smooth consistency. Season with salt and pepper. Remove from the heat and stir in half of the cilantro.
  • Spoon the sauce over the tilapia and serve with bread. Garnish with cilantro.
