Ingredients

Sauce

  • 3 tbsp Extra-virgin olive oil
  • 3 tbsp Fresh parsley
  • 1 tbsp Fresh mint
  • 1 cloves Garlic
  • 1/4 tbsp Lime juice as needed to taste
  • 2 tbsp Fresh cilantro
  • 1/4 tsp Red pepper flakes optional

Steak

  • 6 oz Sirloin steaks
  • 1/4 tsp Garlic powder
  • 1/4 tsp Steak seasoning your favorite seasoning blend
  • 1 tbsp Extra-virgin olive oil
  • 10 Grape tomatoes
  • 2 cloves Garlic
  • 2 slices Crusty bread
  • Fresh thyme garnish

Instructions

  • Preheat the oven to 375 degrees.
  • Place the olive oil, parsley, mint, garlic, lime juice, cilantro, in a blender or food processor and pulse until smooth. Add more lime to taste as desired. Season with salt and pepper to taste and red pepper flakes if using, then set aside.
    Add a little more oil if needed while blending to smooth out the sauce.
  • Rub the beef with garlic powder, seasoning rub, oil, salt and pepper.
  • Preheat an oven safe grill pan or skillet on medium heat. Sear the steak on both sides to get a nice crusted char. Add the tomatoes and garlic to the pan and transfer it to the oven and cook to your desired temperature using a thermometer (see below).
    Continue to roast the tomatoes until softened and blistered and the garlic until soft and golden brown.
  • Once the steak is done set it aside on a cutting board to rest for 5 minutes before cutting into small bite sized pieces.
  • Drizzle the sauce over the steak, serve with roasted tomatoes, smear the garlic on the bread if desired. Garnish with thyme.

Notes

Steak Internal Temperatures:
  • Rare: 115 - 120 degrees F
  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
  • Well Done: 160 degrees F
