Ingredients
- 1 pound Ground beef
- 1/2 cup Red onion diced
- 1 cup Green bell pepper seeded and diced
- 3 cloves Garlic minced
- 1 tbsp Chili powder use more or less depending on spice preference
- 1/2 tbsp Ground cumin
- 1 tbsp Paprika
- 3 cups Chicken broth
- 1/4 cup Tomato paste
- 2 cups Potatoes peeled and diced small
- 1/2 cup White cheddar cheese shredded
- 2 tbsp Fresh cilantro garnish
- 2 tbsp Jalapeño pepper sliced (optional)
Instructions
- Heat a large pot over medium heat. Once hot, brown the ground beef while breaking it up into smaller pieces with a spatula. Once partially browned, add in the onions, peppers, garlic, chili powder, cumin, and paprika (add chili powder a little at a time throughout the cooking process for a milder spice; taste before you add more).
- Stir in chicken broth, tomato paste, and season with salt and pepper. Cover with a vented lid and low simmer for 25 minutes to build flavor. Add in the potato and simmer until the potatoes are tender. Taste and adjust the seasoning with salt and pepper or additional spices if needed.
- Garnish with cheese, cilantro, and jalapeno (if using).
