Ingredients
- 1 pound Chicken breast boneless skinless grilled and diced
- 8 oz Cheese tortellini
- 1 cup Cucumber shopped
- 1 cup Grape tomatoes halved
- 1 Green bell pepper chopped
- 4 oz Mozzarella balls quartered
- 2 tbsp Fresh parsley chopped
- 1/4 loaf Crusty bread sliced
Dressing
- 6 tbsp Extra-virgin olive oil
- 2 tbsp Red wine vinegar
- 1 tbsp Lemon juice
- 3/4 tsp Dried basil
- 1/4 tsp Garlic powder
- 1/2 tsp Dried oregano
Instructions
- Preheat grill or grill pan. Season chicken with salt and pepper and grill 4-6 minutes on each side or until an internal temperature of 160 degrees is reached. Dice chicken once cooked
- Cook the tortellini according to package directions. Once cooked, rinse under cool water to cool, drain well and add to a large bowl. Add the cucumber, tomatoes, peppers, mozzarella, parsley, and diced chicken.
- Whisk all the ingredients for the dressing in a bowl and pour over the tortellini.
- Season with salt and pepper to taste. Serve with crusty bread.
