Ingredients

  • 1 pound Chicken breast boneless skinless grilled and diced
  • 8 oz Cheese tortellini
  • 1 cup Cucumber shopped
  • 1 cup Grape tomatoes halved
  • 1 Green bell pepper chopped
  • 4 oz Mozzarella balls quartered
  • 2 tbsp Fresh parsley chopped
  • 1/4 loaf Crusty bread sliced

Dressing

  • 6 tbsp Extra-virgin olive oil
  • 2 tbsp Red wine vinegar
  • 1 tbsp Lemon juice
  • 3/4 tsp Dried basil
  • 1/4 tsp Garlic powder
  • 1/2 tsp Dried oregano

Instructions

  • Preheat grill or grill pan. Season chicken with salt and pepper and grill 4-6 minutes on each side or until an internal temperature of 160 degrees is reached. Dice chicken once cooked
  • Cook the tortellini according to package directions. Once cooked, rinse under cool water to cool, drain well and add to a large bowl. Add the cucumber, tomatoes, peppers, mozzarella, parsley, and diced chicken.
  • Whisk all the ingredients for the dressing in a bowl and pour over the tortellini.
  • Season with salt and pepper to taste. Serve with crusty bread.
