Ingredients
- 1 pound Chicken breast boneless skinless sliced into medallions
- 2 cloves Garlic minced
- 2 tsp Extra-virgin olive oil
- 12 oz Baby spinach
- 2 oz Cream cheese cubed
- 4 oz Mozzarella cheese shredded
- 4 tbsp Feta cheese crumbled
- 4 slices Crusty bread
Instructions
- Preheat the oven to 375F degrees.
- Lightly grease a baking dish with oil.
- Transfer the chicken to the baking dish and bake for 10 minutes.
- In the meantime, heat olive oil in a skillet; add spinach and garlic and cook for 2 minutes, or until wilted.
- Remove the spinach from the heat, stir in the cream cheese, and season with a pinch of salt and pepper; stir until softened.
- Take chicken out of the oven and layer the spinach mixture over each piece.
- Top with shredded mozzarella and feta cheese. Cover with foil.
- Bake for an additional 15 - 20 minutes, or until the cheese is melted, and chicken is cooked thoroughly to an internal temperature of 160 degrees using a thermometer.
- Remove from the oven and serve with dinner rolls.
