Preheat the oven to 375F degrees.
Lightly grease a baking dish with oil.
Transfer the chicken to the baking dish and bake for 10 minutes.
In the meantime, heat olive oil in a skillet; add spinach and garlic and cook for 2 minutes, or until wilted.
Remove the spinach from the heat, stir in the cream cheese, and season with a pinch of salt and pepper; stir until softened.
Take chicken out of the oven and layer the spinach mixture over each piece.
Top with shredded mozzarella and feta cheese. Cover with foil.
Bake for an additional 15 - 20 minutes, or until the cheese is melted, and chicken is cooked thoroughly to an internal temperature of 160 degrees using a thermometer.
Remove from the oven and serve with dinner rolls.
