Chicken Spinach Bake

w/ dinner rolls

Ingredients

  • 1 pound Chicken breast boneless skinless sliced into medallions
  • 2 cloves Garlic minced
  • 2 tsp Extra-virgin olive oil
  • 12 oz Baby spinach
  • 2 oz Cream cheese cubed
  • 4 oz Mozzarella cheese shredded
  • 4 tbsp Feta cheese crumbled
  • 4 slices Crusty bread

Instructions

  • Preheat the oven to 375F degrees.
  • Lightly grease a baking dish with oil.
  • Transfer the chicken to the baking dish and bake for 10 minutes.
  • In the meantime, heat olive oil in a skillet; add spinach and garlic and cook for 2 minutes, or until wilted.
  • Remove the spinach from the heat, stir in the cream cheese, and season with a pinch of salt and pepper; stir until softened.
  • Take chicken out of the oven and layer the spinach mixture over each piece.
  • Top with shredded mozzarella and feta cheese. Cover with foil.
  • Bake for an additional 15 - 20 minutes, or until the cheese is melted, and chicken is cooked thoroughly to an internal temperature of 160 degrees using a thermometer.
  • Remove from the oven and serve with dinner rolls.
