Ingredients
- 4 oz Chicken breast boneless skinless
- 1/2 tbsp Extra-virgin olive oil
- 6 Street Taco Shells about 3 inches in diameter
- 1/2 cup Romaine lettuce shredded
- 1/3 cup Grape tomatoes quartered
- 1/2 Avocado diced small
- Fresh cilantro garnish
- Lime cut into wedges for garnish
- 1 Jalapeño pepper sliced for garnish
Mole sauce
- 1/4 tsp Garlic powder
- 1/4 tsp Chili powder
- 1/4 tsp Paprika
- 1/2 cup Chicken broth
- 1/8 tsp Dried oregano
- 1/4 tsp Ground cumin
- 1/8 tsp Ground cinnamon
- 3/4 tsp Unsweetened cocoa powder
- 1 tsp Lime juice
- 1 tbsp Tomato paste
Instructions
- Season the chicken on both sides with salt and pepper. Drizzle with a small amount of oil.
- Heat a grill pan or grill over medium heat. Grill the chicken on both sides and cook to an internal temperature of 160 degrees using a thermometer. Remove from the pan and set aside. Slice before serving.Grill the taco shells on both sides to warm.
- For the mole sauce: whisk together all of the ingredients for the sauce. Simmer, stirring occasionally until the sauce becomes thick and rich.
- Top the taco shells with lettuce, chicken, tomatoes, and avocado. Drizzle with sauce (save any extra to serve on the side if desired). Garnish with cilantro, lime wedge, and jalapeno.
