Ingredients
- 1 tbsp Extra-virgin olive oil
- 1 pound Chicken breast boneless skinless cut into medallions
- 3 tbs Onion chopped
- 2 cloves Garlic minced
- 1 cup Chicken broth
- 1 tbsp Chipotle Sauce
- 1 tsp Ground cumin
- 3 tbsp Cacao powder
- 2 tbsp Tomato paste
- 1 Lime cut into wedges
- 2 tbsp Fresh cilantro
Instructions
- Heat the oil in a nonstick pan over medium-high heat. Meanwhile, season the chicken with salt and pepper. Add the chicken, onion and garlic to pan; saute for 3 minutes.
- Stir in the broth, chipotle sauce, cumin, cocoa powder, and tomato paste. Reduce heat; simmer, stirring occasionally until the sauce becomes thick and rich. Garnish with lime wedges and cilantro leaves.
