Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 1 pound Chicken breast boneless skinless cut into medallions
  • 3 tbs Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Chicken broth
  • 1 tbsp Chipotle Sauce
  • 1 tsp Ground cumin
  • 3 tbsp Cacao powder
  • 2 tbsp Tomato paste
  • 1 Lime cut into wedges
  • 2 tbsp Fresh cilantro

Instructions

  • Heat the oil in a nonstick pan over medium-high heat. Meanwhile, season the chicken with salt and pepper. Add the chicken, onion and garlic to pan; saute for 3 minutes.
  • Stir in the broth, chipotle sauce, cumin, cocoa powder, and tomato paste. Reduce heat; simmer, stirring occasionally until the sauce becomes thick and rich. Garnish with lime wedges and cilantro leaves.
