Ingredients
- 1 TBSP Extra-virgin olive oil
- 1/3 cup Onion diced
- 2 cloves Garlic minced
- 1 TBSP Fresh ginger grated
- 12 oz Ground chicken
- 1/4 cup Hoisin sauce
- 2 TBSP Reduced-sodium soy sauce
- 1/2 TBSP Rice wine vinegar
- 4 oz Water chestnuts drained and chopped
- 2 TBSP Scallions thinly sliced
- 1/2 TBSP Sriracha sauce optional
- 1/2 head Butter lettuce about 5 large leaves per portion
- Salt to taste
- Black pepper to taste
Kombucha
- 24 oz Kombucha cold
Instructions
- Prep lettuce wrap ingredients per instruction above.
- Heat olive oil in a saucepan over medium high heat. Saute the garlic, onion, and ginger until fragrant. Add in ground chicken and cook until browned (about 3-5 minutes) using a spatula to crumble the chicken as it cooks. Drain any excess fat.
- Stir in hoisin sauce, soy sauce, rice wine vinegar, water chestnuts, scallions,and Sriracha. Bring to a simmer to build flavor. Season with salt and pepper to taste.
- Serve: Spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style. Enjoy with kombucha.
