Ingredients
- 1 TBSP Extra-virgin olive oil
- 12 oz Ground chicken
- 2 cloves Garlic minced
- 1/3 cup Onion diced
- 1 TBSP Fresh ginger grated
- 1/4 cup Hoisin sauce
- 2 TBSP Reduced-sodium soy sauce
- 1/2 TBSP Rice wine vinegar
- 1/2 TBSP Sriracha sauce optional
- 4 oz Water chestnuts drained and chopped
- 2 TBSP Scallions thinly sliced
- 1/2 head Butter lettuce about 5 large leaves per portion
Brie Crisps
- 10 slices Baguette sliced 1/4 inch thick
- Extra-virgin olive oil drizzling
- 4 oz Brie cheese sliced
- Honey drizzling
Iced Green Tea
- 24 oz Iced Green Tea cold
Instructions
- Preheat the oven broiler on low.
- Prep the brie crisps: Drizzle the crostini with oil, place sliced brie on each crostini, then drizzle with honey.
- Prep lettuce wrap ingredients per instruction above.
- Heat olive oil in a saucepan over medium high heat. Saute the garlic, onion, and ginger until fragrant. Add in ground chicken and cook until browned (about 3-5 minutes) using a spatula to crumble the chicken as it cooks. Drain any excess fat.
- Stir in hoisin sauce, soy sauce, rice wine vinegar, and Sriracha.
- Stir in water chestnuts and scallions until tender, about 1-2 minutes; season with salt and pepper to taste.
- Finish brie crisps: Broil the brie crisps until the cheese is melted and crostini edges are golden brown.
- Serve: Spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style. Enjoy with brie crisps and iced green tea.
