Chicken Focaccia Sandwich

Ingredients

  • 1 loaf Focaccia bread cut into squares or wedges depending on shape, purchase or make your own
  • 12 oz Chicken breast boneless skinless butterflied
  • 2 tsp Extra-virgin olive oil plus a little more for drizzling if desired
  • 8 slices Tomato
  • 2 cups Arugula
  • 8 slices Fresh mozzarella thinly sliced
  • 4 Pickle spears

Dressing

  • 3 tbsp Extra-virgin olive oil
  • 1 tbsp Apple cider vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp Dried oregano

Instructions

  • Whisk together all of the ingredients for the dressing. Season with salt and pepper to taste.
  • Season the chicken well with salt and pepper on both sides and rub with olive oil.
  • Preheat a grill pan or nonstick pan on medium heat. Once hot, cook the chicken on both sides to an internal temperature of 160 degrees using a thermometer. Set aside to rest for 5 minutes before slicing thin.
  • Spread the dressing on both halves of the bread. Layer the sandwich with arugula, tomato, chicken, fresh mozzarella (drizzled with a little olive oil and seasoned with salt and pepper, and tomato.
  • Serve with pickles.
