Ingredients

  • 4 tbsp Mayonnaise
  • 2 tbsp Chipotle Sauce
  • 2 tsp Extra-virgin olive oil
  • 12 oz Chicken breast boneless skinless sliced into thin strips
  • 1 Green bell pepper seeds and stem removed and cut into thin strips
  • 1/2 Onion sliced into strips
  • 4 oz Mushrooms sliced
  • 4 Tortilla wraps
  • 4 oz Provolone cheese
  • 4 Pickles halved

Instructions

  • In a small bowl, combine mayonnaise and chipotle sauce.
  • Preheat the oven to 400 degrees
  • Heat the oil in a nonstick pan over medium heat. Add the chicken and cook for 3 - 5 minutes until the outside is golden brown. Add in the peppers, onion, and mushrooms and cook for an additional 4 - 6 minutes or until the vegetables are soft.
  • Spread the mayo onto the wrap, layer with cheese and chicken vegetable mix. Fold in the ends and roll up. Place on a baking sheet and put into the oven for 4 - 6 minutes until the cheese is melted. Cut in half and serve with pickles.
