Chicken Cheddar Pita

Ingredients

  • 4 Pita bread
  • 2 tbsp Extra-virgin olive oil
  • 4 oz Cheddar cheese shredded
  • 3/4 pound Chicken breast boneless skinless sliced into strips
  • 1/4 onion peeled and sliced
  • 4 oz Mushrooms sliced
  • 1/2 bell pepper seeded and sliced into strips
  • 4 tsp Steak sauce A-1 or comparable brand

Instructions

  • Heat half of the olive oil in a nonstick pan over medium heat. Add the chicken, sprinkle with a pinch of salt and pepper. Cook the chicken for about 6 - 8 minutes until the pieces are no longer pink inside. Remove the chicken from the pan and set aside.
  • Add the remaining olive oil to the pan over high heat. Add in the onions, mushrooms, and peppers and cook for 5 to 7 minutes until vegetables are soft. Then add the chicken back into the pan and cook for 1 - 2 minutes.
  • Spread the steak sauce on the pita. Layer the pita with cheddar and the chicken, onions, mushrooms, and peppers mixture. Fold in half and serve.
