Ingredients
- 1 cup Cucumber sliced thin
- 1/2 cup Carrots shaved
- 1/4 cup Red onion shaved
- 1/2 cup Rice wine vinegar
- 3/4 lb Chicken breast boneless skinless sliced thin
- 1 tbsp Chicken Seasoning rub montreal chicken seasoning or your favorite seasoning rub
- 2 tsp Extra-virgin olive oil
- 4 Long rolls lightly toasted
- 1 cup Romaine lettuce shredded
- 8 slices Tomato
- 4 tbsp Sweet chili sauce
- 4 tbsp Fresh cilantro garnish
- Jalapeño pepper sliced for garnish (optional)
- 4 Pickle spears
Instructions
- Submerge the cucumber, carrots, and onion in a bowl with vinegar. Mix well and let sit for 20 minutes. Drain well before using.
- Season the chicken with the seasoning rub. Heat a nonstick pan on medium heat. Once hot, add the oil. Saute the chicken golden brown on all sides to an internal temperature of 160 degrees using a thermometer. Then set aside.
- Lightly toast the bread.
- Layer the bread with lettuce, tomato, chicken, and pickled vegetables. Drizzle with sweet chili sauce. Garnish with cilantro and jalapeno. Serve with pickle.
