Ingredients
- 2 Potatoes peeled and diced
- 4 tbsp Extra-virgin olive oil
- 4 oz Cheddar cheese shredded
Instructions
- Peel and cut potatoes into bite-sized chunks so they all cook evenly
- Place in a pot with cold water and on high heat to bring them to a boil.
- Check different potatoes by inserting a fork into them, once the fork slides in and out with ease take off the heat and strain out all of the water.
- In a nonstick pan over medium heat, get the oil hot.
- Using a fork mash the potatoes. Season well with salt and pepper. Mix in the cheddar cheese and form into pancakes.
- Place the potato pancakes into the pan and cook on both sides to golden brown. Serve.
