Cheddar Potato Pancakes

Ingredients

  • 2 Potatoes peeled and diced
  • 4 tbsp Extra-virgin olive oil
  • 4 oz Cheddar cheese shredded

Instructions

  • Peel and cut potatoes into bite-sized chunks so they all cook evenly
  • Place in a pot with cold water and on high heat to bring them to a boil.
  • Check different potatoes by inserting a fork into them, once the fork slides in and out with ease take off the heat and strain out all of the water.
  • In a nonstick pan over medium heat, get the oil hot.
  • Using a fork mash the potatoes. Season well with salt and pepper. Mix in the cheddar cheese and form into pancakes.
  • Place the potato pancakes into the pan and cook on both sides to golden brown. Serve.
