Instructions
Peel and cut potatoes into bite-sized chunks so they all cook evenly
Place in a pot with cold water and on high heat to bring them to a boil.
Check different potatoes by inserting a fork into them, once the fork slides in and out with ease take off the heat and strain out all of the water.
In a nonstick pan over medium heat, get the oil hot.
Using a fork mash the potatoes. Season well with salt and pepper. Mix in the cheddar cheese and form into pancakes.
Place the potato pancakes into the pan and cook on both sides to golden brown. Serve.
