Ingredients

  • 2 tsp Extra-virgin olive oil
  • 2 tbsp Red onion diced small
  • 2 tbsp Carrots diced small
  • 2 tbsp Celery diced small
  • 1 cups Chicken broth
  • 1/4 cup Brown lentils

Instructions

  • Heat a pot over medium heat. Once hot, add the oil. Saute the onion, carrot, and celery until the onion is soft.
  • Stir in the broth and lentils. Cover with a lid and bring to a simmer until lentils are tender. Refer to the instructions for cooking time. (Drain excess liquid if needed so it isn't soupy). Season with salt and pepper to taste.
