Broccoli Soup w/ Garlic Croutons

Ingredients

  • 1 Tbsp Butter
  • 1 tbsp Extra-virgin olive oil plus 2 teaspoons for the croutons
  • 1/4 cup Onion minced
  • 3 cloves Garlic minced
  • 4 tsp All-purpose flour
  • 4 cups Chicken broth
  • 4 cups Broccoli stem removed and florets chopped small
  • 1/4 cup Scallions chopped, plus more for garnish
  • 1.5 cups Sourdough bread diced
  • 1 tsp Garlic powder
  • 1/2 cup Milk
  • 3/4 cup Cheddar cheese shredded, plus more for garnish

Instructions

  • Heat the butter and oil in a pot over medium heat. Sauté the onions and garlic until golden brown. Stir in the flour and cook for 1-2 minutes.
  • Stir the broth and broccoli. Season with salt and pepper. Cover with a lid and bring to a simmer for about 15 - 20 minutes until the flavor builds. Stirring occasionally.
  • Preheat the oven broiler on low. Mix the bread, oil, garlic powder, salt and pepper in a bowl. Lay out on a foil-lined baking sheet and place under the broiler until toasted golden brown, mixing the croutons around every couple minutes so all sides get toasted. Then set aside.
  • Stir the milk and cheese into the soup until it melts completely. Taste and adjust the seasoning with salt if needed.
  • Garnish with croutons and shredded cheese.
