Ingredients

Breakfast Skillet

  • 2 TBSP Canola oil
  • 2 cups Potatoes diced
  • ½ cup Onion diced
  • ½ cup Green bell pepper diced
  • 4 Breakfast sausage links chopped
  • Salt and pepper to taste
  • 4 Eggs
  • ½ cup Cheddar cheese shredded
  • Scallions for garnish (optional)

Buttered Toast

  • 2 slices Your choice of bread
  • Butter for spreading

Apple Cider

  • 24 oz Apple cider

Instructions

Breakfast Skillet

  • Prep the ingredients per the instructions above.
  • In a large skillet, heat the oil over medium-high heat. Add the diced potatoes and cook, stirring occasionally, until they start to brown and become tender, about 6 - 7 minutes. Add the diced onions, bell peppers, and sausage to the skillet with the potatoes. Continue cooking until the vegetables are soft and slightly caramelized, and sausage is nicely browned. Season with salt and pepper to taste.
  • Create indentations in the potato mixture with a spoon. Crack one egg into each indent.
  • Cover the skillet with a lid and cook until the egg whites are set but the yolks are still slightly runny, about 3-4 minutes for medium eggs. Adjust the cooking time if you prefer your eggs more or less done.
  • Sprinkle shredded cheese evenly over the skillet, and garnish with scallions, if desired.
  • Toast the bread slices in a toaster. Spread butter on each toasted slice.
  • Serve the breakfast skillet with buttered toast and apple cider. Enjoy!
