Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 cup Potatoes shredded
  • 1/4 tsp Paprika
  • 1/4 tsp Garlic powder
  • 4 small Soft taco shells
  • 1/4 cup Colby cheese shredded
  • 4 Eggs
  • 1 tbsp Grape tomatoes diced small
  • 2 tsp Hot sauce
  • 1 Plums pitted and sliced (Check the Fruit guide to substitute seasonal fruits
  • Fresh cilantro garnish

Instructions

  • Heat a saute pan on medium heat. Once hot, add half of the oil. Saute the potatoes seasoned with paprika, garlic powder, salt, and pepper until they are tender. Then set aside.
  • Preheat the oven broiler on low. Place the tortillas on a baking sheet and broil in until golden brown, then flip them over and top with cheese. Broil until the cheese is melted.
  • In a nonstick pan over low medium heat, add the remaining oil. Carefully crack the eggs into the pan being careful not to break the yolks. Cook for about 3 - 4 minutes until the whites are firm and no longer runny.
  • Spoon the potato onto the tortilla, top with eggs, diced tomato, and hot sauce. Serve with plum. Garnish with cilantro.
