Ingredients
- 2 tbsp Extra-virgin olive oil
- 1 cup Potatoes shredded
- 1/4 tsp Paprika
- 1/4 tsp Garlic powder
- 4 small Soft taco shells
- 1/4 cup Colby cheese shredded
- 4 Eggs
- 1 tbsp Grape tomatoes diced small
- 2 tsp Hot sauce
- 1 Plums pitted and sliced (Check the Fruit guide to substitute seasonal fruits)
- Fresh cilantro garnish
Instructions
- Heat a saute pan on medium heat. Once hot, add half of the oil. Saute the potatoes seasoned with paprika, garlic powder, salt, and pepper until they are tender. Then set aside.
- Preheat the oven broiler on low. Place the tortillas on a baking sheet and broil in until golden brown, then flip them over and top with cheese. Broil until the cheese is melted.
- In a nonstick pan over low medium heat, add the remaining oil. Carefully crack the eggs into the pan being careful not to break the yolks. Cook for about 3 - 4 minutes until the whites are firm and no longer runny.
- Spoon the potato onto the tortilla, top with eggs, diced tomato, and hot sauce. Serve with plum. Garnish with cilantro.
