Ingredients

Cucumber Water:

  • 8 slices Cucumber
  • 24 oz Water

Air Fryer French Fries:

  • 2 large Russet potatoes cut into fries (about 1/2lb per portion)
  • 1 TBSP Extra-virgin olive oil
  • Salt to taste

Bocadillo de Salmón:

  • 2 small Baguette or sandwich rolls
  • 2 TBSP Extra-virgin olive oil
  • 4 TBSP Cream cheese softened
  • 8 oz Smoked salmon
  • 1/2 cup Red onion thinly sliced
  • 1/4 cup Fresh dill chopped
  • Salt
  • Black pepper to taste

Instructions

  • Prep the ingredients per the instructions above.
  • Prepare the Cucumber Water: In a pitcher, combine the sliced cucumber and water. Stir well and refrigerate.
  • Preheat the air fryer to 400°F (200°C).
  • Prepare the Air Fryer French Fries: Place the cut potatoes in a bowl and drizzle with olive oil. Toss to coat the fries evenly with the oil. Sprinkle with salt to taste. Transfer the fries to the air fryer basket in a single layer, making sure they are not overcrowded. Cook the fries in the air fryer for about 15-20 minutes, shaking the basket halfway through, until they are golden and crispy. Remove the fries from the air fryer and season with salt and pepper to taste.
  • Prepare the Bocadillo de Salmón: Cut the baguettes or sandwich rolls in half lengthwise. Drizzle with oil. Toast the bread in a toaster oven or under the oven broiler on low to golden brown.
  • Spread cream cheese on the bottom half of each roll. Layer the smoked salmon, red onion slices, and fresh dill on top of the cream cheese. Season with salt and black pepper to taste. Close the sandwiches with the top halves of the rolls.
  • Serve the sandwiches with French fries and cucumber water.
