Ingredients

Bocadillo de Atún

  • 8 oz Tuna fish drained (your preference: albacore chunk light etc)
  • 2 TBSP Mayonnaise
  • 1 tsp Dijon mustard
  • ¼ cup Olives pitted and chopped
  • 1 TBSP Fresh parsley chopped
  • Salt to taste
  • Black pepper to taste
  • 2 Sub rolls or 6-inch pieces baguette
  • 1/2 Red onion thinly sliced
  • 1 Tomato sliced
  • 1/2 cup Romaine lettuce shredded
  • 2 oz Potato chips
  • 2 Pickle spears

Homemade Lemonade

  • 1 cup Lemon juice fresh squeezed
  • 16 oz Water
  • Sugar use to taste
  • Ice cubes

Instructions

  • Prep the ingredients per the instructions above.
  • Prepare the Tuna Mixture: In a bowl, combine the drained tuna, mayonnaise, Dijon mustard, chopped olives, chopped parsley, salt, and black pepper. Mix well.
  • Slice and Toast the Bread: Cut the rolls or baguettes in half. Optionally, toast them lightly for added texture.
  • Assemble the Bocadillo de Atún: Spread the tuna mixture evenly on the bottom half of each roll. Top the tuna mixture with red onion, tomato, and lettuce. Place the other half of the roll on top.
  • Mix together all of the ingredients for the homemade lemonade. Serve over ice if desired.
  • Serve: Slice the bocadillo in half and enjoy your delicious bocadillo de atún with chips, pickle, and homemade lemonade.
