Ingredients

Biscuits

  • 1 cup All-purpose flour
  • 1 ½ tsp Baking powder
  • ¼ tsp Baking soda
  • ¼ tsp Salt
  • ½ cup Buttermilk (or substitute with milk + 1/2 TBSP vinegar or lemon juice)
  • 4 TBSP Unsalted butter cold and diced

Gravy

  • 4 oz Ground sausage
  • 2 TBSP All-purpose flour
  • 1 ½ cups Milk
  • Salt to taste
  • Black pepper to taste

Eggs

  • 1 TBSP Butter or cooking oil
  • 4 Eggs large

Orange Juice

  • 24 oz Orange Juice

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a mixing bowl, combine the flour, baking powder, baking soda, and salt for the biscuits.
  • Prepare the buttermilk by mixing milk with vinegar or lemon juice if you don't have buttermilk available.
  • Add the diced cold butter to the dry ingredients and use a pastry cutter or fork to cut it into the flour until the mixture resembles coarse crumbs.
  • Gradually add the buttermilk and stir until the dough just comes together.
  • Transfer the dough onto a floured surface and gently knead it a few times. Pat it into a circle about 1/2 inch thick.
  • Use a biscuit cutter or a drinking glass to cut out biscuits. Place them on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
  • While the biscuits are baking, cook the sausage in a skillet over medium heat, breaking it up into crumbles as it cooks.
  • Once the sausage is browned, sprinkle flour over it and stir to combine, allowing the flour to cook for about a minute.
  • Slowly pour in the milk while stirring constantly to prevent lumps. Cook and stir until the gravy thickens, then season with salt and pepper to taste. Reduce heat to low and keep warm.
  • In a separate non-stick skillet, heat butter or cooking oil over medium heat.
  • Crack the eggs into the skillet and cook to your desired doneness, seasoning with salt and pepper.
  • Once the biscuits are done baking, split them in half and place them on plates.
  • Ladle the warm sausage gravy over the biscuits.
  • Serve the two cooked eggs alongside the biscuits and gravy. Pour orange juice into a glass and enjoy!
